So I lied...

This isn't the promised tomorrow of my last post and I do not yet have a pictorial inventory of my WIPS. But I do have a recipe, a really simple one.

Blueberry Crisp

4 C. blueberries, washed and drained -- I use Maine blueberries, the little ones

3 T. cornstarch

1/2 C butter (1 stick), cut into 8 pieces

3/4 - 1 Cup uncooked rolled oats

1/2 - 2/3 C dark brown sugar

1 tsp. cinnamon

Preheat oven to 350F

Place blueberries in a large plastic storage bag and toss with cornstarch so that berries are coated with it.

Pour berries into butter baking dish. 

Put oatmeal, brown sugar and cinnamon into bowl of food processor. Pulse the mixture as you add the pieces of butter. Stop processing when butter is blended in and mixture is crumbly.

Evenly sprinkle topping over berries. Bake for 45 minutes or until topping is nicely browned.

You can use apples, peaches, pears or other fruits in place of or in combination with blueberries. This is a really easy and delicious dessert.
